Family BBQ Boneless Skinless Chicken Thighs

A killer family recipe for the grill.

Serves: 4–6

Ingredients

  • 3 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 cup BBQ sauce
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard

Directions

  1. Preheat the grill to medium heat, approximately 375°F.
  2. Pat the chicken thighs dry. Toss with olive oil, salt, pepper, garlic powder, onion powder, smoked paprika and chili powder.
  3. In a bowl, combine the BBQ sauce, brown sugar, apple cider vinegar, Worcestershire sauce and Dijon mustard.
  4. Grill the chicken for 5–6 minutes per side, until nicely marked.
  5. Brush the chicken with the sauce and continue grilling for 3–4 minutes per side, turning and basting until the chicken is sticky, caramelized and reaches an internal temperature of 165°F.
  6. Allow the chicken to rest for 5 minutes before serving.

Make extra sauce for the table and keep the heat moderate so the sugars caramelize without burning.
